Dewazakura Ginjo & Sushi at Nagisa
At Nagisa, we carefully select sake that complements the rhythm of the ocean and the precision of our sushi. One of our most loved selections is Dewazakura Ginjo from Yamagata, Japan.
Ginjo sake is crafted by polishing the rice down to 60% or less and fermenting it slowly at low temperatures. This method creates a refined, aromatic style of sake known for its elegance and clarity. Dewazakura is one of the pioneering breweries that helped introduce this fragrant Ginjo style to a wider audience in Japan and internationally.
When poured into a glass, Dewazakura Ginjo opens with delicate aromas of green apple and pear. The texture is light and smooth, with a clean, refreshing finish. For wine lovers, it often feels familiar — bright, aromatic, and beautifully balanced.
What to Pair with Dewazakura at Nagisa
Dewazakura Ginjo shines alongside delicate flavors.
White Fish (Tai, Halibut, Flounder)
The subtle sweetness of white fish is enhanced by the sake’s crisp finish. If served with sea salt instead of soy sauce, the pairing becomes even more refined.
Scallop (Hotate)
The natural sweetness of scallop mirrors the fruity notes in the sake, creating a seamless and elegant harmony. A light squeeze of lemon elevates the experience.
Engawa (Halibut Fin)
While slightly richer, the clean acidity of Ginjo cuts through the texture, keeping the palate refreshed.
Because of its delicate nature, Ginjo is best enjoyed with lighter preparations. Strong miso glazes, heavily sauced dishes, or bold spicy flavors may overpower its subtle aroma. For those dishes, we often recommend a richer Junmai or Yamahai style instead.
How We Serve It
We recommend enjoying Dewazakura Ginjo chilled (around 45–55°F) and served in a wine glass. This allows the aroma to fully open and enhances the overall dining experience.
At Nagisa, we think of sake not as something intimidating, but as something deeply connected to food — just like wine. Dewazakura Ginjo offers a clean, elegant introduction to Japanese sake while pairing beautifully with our sushi.
Next time you visit, try a glass alongside white fish or scallop and experience how seamlessly it complements the flavors of the sea.
